Spicy Okra Gumbo

2 lbs. ground beef

3 stalks of green onions, chopped

¼ cup chopped white onions

2 cloves garlic, chopped

2 tablespoons CW Seasonings

4 cups frozen okra

1 can diced tomatoes (14.5 oz)

3 sausage rings, diced

2 medium Serrano peppers, chopped

2 cans of tomato sauce

3 cups chicken stock (water may be substituted for stock)

3 bay leaves

1 lb. shrimp, peeled and deveined

 

In large deep dish skillet, brown ground beef and drain fat.  Return ground beef to skillet and stir in chopped onions.  Let onions simmer in meat for 3 to 5 minutes until onions have wilted.  Add chopped garlic, CW Seasoning, frozen okra and diced tomatoes.  Stir together thoroughly.  Reduce heat to medium low and simmer long enough to chop up sausage and peppers.  Stir in sausage, peppers, tomato sauce, chicken stock and bay leaves.  Mix together thoroughly, cover and simmer on medium heat for 15 minutes.   Stir in the shrimp and simmer for 15 more minutes.  Serve over rice or with French bread or crackers.  Remove bay leaf before serving.   Makes approximately 10 medium bowls.
